About Manos Juntas

Manos Juntas is a micro mill in the Sotara area of Colombia's Cauca region.  This particular offering was first purchased in its cherry form when delivered to the mill on the day of harvest. Upon arrival, the Brix and pH were recorded, and the cherries are placed in large hermetic tanks for a five-day-long anaerobic fermentation. During this period, nitrogen gas is introduced into the tanks to stimulate the yeast. Brix and pH are measured constantly through this process and are used to determine the stopping point for fermentation; the coffee is then subjected to 20°C temperatures to cease fermentation and remove the yeast and other microorganisms.

This specialty coffee offers a sweet, winey, and balanced cup, perfect for those who enjoy a complex yet harmonious brew. The natural processing method brings out rich fruit notes, including subtle hints of berries and a mild, pleasant acidity that is characteristic of Colombian coffees. The coffee finishes with a smooth, clean aftertaste, making it suitable for a variety of brewing methods from espresso to pour-over.

Coffee Process

    The beans used in Manos Juntas undergo the natural processing method, one of the oldest and most traditional ways of processing coffee. In this method, the ripe coffee cherries are dried with the fruit still intact, allowing the beans to absorb the flavors of the fruit during the drying process. This results in a coffee that has a distinctly fruity and sweet profile, with added complexity and body. The natural process enhances the coffee’s inherent sweetness, creating a smooth and full-bodied cup with a pleasant wine-like acidity. Naturally processed coffees, the cherry is then "aged" in tanks for a period of five more days before they are taken to solar dryers. Drying takes 30–45 days. Basically, the ripest cherries are selected for natural processing, they are often hand-sorted or float-sorted, cleaned, and placed on raised beds in a covered area to dry for at least two weeks. The high humidity and rainy climates across Colombia do add to the challenge of achieving a high-quality naturally-processed coffee; but, when it is done properly and the coffee is moved consistently throughout the curing process, we find the resulting cup profile to be exquisite.
